A sustainable dining services and the sustainable foods movement
Two students worked extensively with dining
services thi past summer at PLU to bring more local and organic produce
to the campus cafeteria.
GREAN spearheaded a local foods fair in September to highlight the importance of local, sustainable foods. Local organizations set up tables to help educate students, faculty and community. Dining services provided a meal made from local and organic goods and a number of musicians kept the crowd entertained Click here to read The Mast cover story on the fair.
Efforts are still ongoing and dining service
has pledged to continue its work on sustainable practices. We've
also recently begun to compost food scraps from our cafeteria. We're
using worms in a process known as vermicomposting. GREAN has built
three compost bins and has just
now begun to compost food scraps and coffee grounds. Stay tuned for
more info as we figure out exactly how to
work this thing.
