Erick Swenson is a native of Seattle, Washington. In 1991 he graduated with a Bachelor’s Degree from Pacific Lutheran University. Erick’s diverse vocal and instrumental background, coupled with a passion for music, naturally led to a degree in the Musical Arts. Upon graduation, Erick re-discovered another passion: food and cooking. An interest in the culinary arts, sparked by his first job in a small north Seattle Italian Restaurant, led him to a Culinary Arts certificate from Bates Technical College in Tacoma, WA. Erick immediately went to work for the Holiday Inn in SeaTac, WA. He followed this with nine years of cooking for the Sheraton Hotel & Towers in Seattle, WA.

In 2006 Erick returned to Pacific Lutheran University, where he enjoys sharing his rich culinary background with staff and students alike. In March of 2013 Erick earned the Certified Chef de Cuisine designation from the American Culinary Federation. He currently holds the title of Sous Chef for Dining and Culinary Services. Erick manages 15 kitchen employees and enjoys creating menus and recipes for The Commons dining facility.
